February’s Lallapolosa Newsletter - Recipe Corner

We’ve been obsessed with shortbread lately, trying lots of different flavours and fancies.  This one has to be our all time favourite though!  Take a look below for the secret recipe to Lallapolosa’s exotic Chai Shortbread.

Lallapolosa Chai Shortbread

125 grams unsalted butter

60 grams caster sugar

1 teaspoon of vanilla extract or vanilla seeds (1 pod)

125 grams plain flour

40 grams icing sugar

60 grams rice flour

1 ½  teaspoons ground cinnamon

1 ½ teaspoons ground cardamom

1 teaspoon ground ginger

½ teaspoon ground cloves

½ teaspoon ground nutmeg

Beat the butter, sugar, icing sugar and vanilla together until well combined. In a separate bowl mix plain flour, rice flour and spices. Add dry ingredients to butter and sugar mixture. Combine until the mixture clumps together. Gather into a ball and chill in the fridge wrapped in cling film for 1 hour.

Press into a 7 by 7 inch pan. Sprinkle with caster sugar and bake for 40-45 minutes at 160 degrees centigrade until golden brown and fragrant.  Remove the shortbread from the oven.  Immediately cut the shortbread whilst still in the tin into 12 pieces.

Allow to cool and enjoy!

You will never go back to powders after you try our divine hot chocolate!

Lallapolosa’s Decadent Hot Chocolate

300 ml semi-skimmed milk

200 ml single cream

100 grams good quality dark chocolate chopped into small pieces

100 grams good quality milk chocolate chopped into small pieces

1 tablespoon honey

1 teaspoon vanilla or 1 vanilla pod

1 teaspoon instant coffee

Heat milk and cream in saucepan to a simmer, or until just starting to bubble around the edges. Add chopped chocolate, honey, vanilla and coffee. Whisk  until chocolate has completely melted and the hot chocolate mixture is slightly frothy and completely combined. Heat again gently to back to simmer.  Pour into 2 large mugs and garnish with vanilla pod or cinnamon sticks. Enjoy!!

Add a shot (or 2!) of your favourite liquor to make a naughty but delicious boozy hot chocolate!
